Land Grants in Alta California
Crisostomo Perez of the State Lands Commission put together a book called "Land Grants in Alta California" that may have some information that would interest you, including some "general instructions to deputy surveyors engaged in the survey of land claims that have been finally confirmed". It also has Case #'s, Volume & Page numbers for court cases, on all of the Ranchos in California. It was published by Landmark enterprises, so I would check with Paul Cuomo Press for availability.

"Chaining the Land" by Bud Uzes
"Chaining the Land" by Bud Uzes has a great deal of general information on that subject and many others.
It is a treasure, if you don't have it in your library, get it.
CLSA sells it on this site.
The Perez book is EXCELLENT as well, they were selling it on eBay for less than $20 a few months ago, it may still be up there. Highly recommended.
Information specific to a Rancho Survey can be had from BLM as the others have said.
You will enjoy the Uzes and Perez books. Informative and entertaining!

W.W. Robinson, "Land in California", University of California Press, 1948, ISBN: 0-520-03875-4 is now in paperback and being reprinted. It's a great source of histoical information on land in California, including Ranchos.
